Ingredients
- 1 lb smoked sausage (Sliced into ½-inch pieces)
- 1 green cabbage (Medium, chopped)
- 1 yellow onion (Large, sliced)
- 1 red onion (Small, cut into chunks)
- 3 tbsp olive oil
- 2 tbsp melted butter
- 3 dientes garlic (Minced)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp dried thyme
- 0.75 tsp salt
- 0.5 tsp black pepper
- 0.25 tsp red pepper flakes (Optional)
- 1 tbsp parsley (Chopped, for finishing)
Steps
- 1
Preheat the oven to 425 °F (220 °C). Lightly grease a 9 × 13-inch baking dish or a large rimmed baking sheet.
- 2
Place the chopped cabbage, sliced onion, and red onion in the prepared dish or baking sheet.
- 3
Drizzle the vegetables with the olive oil and melted butter.
- 4
Sprinkle on the garlic, smoked paprika, garlic powder, onion powder, thyme, salt, black pepper, and, if using, the red pepper flakes.
- 5
Toss until all the vegetables are evenly coated.
- 6
Spread the vegetables into an even layer and bake for 15 minutes.
- 7
Remove the dish from the oven and toss the cabbage so it cooks evenly.
- 8
Arrange the smoked sausage slices over the vegetables.
- 9
Return the dish to the oven and bake for 20–25 minutes. Toss once halfway through, until the sausage is browned and the cabbage is tender, with caramelized edges.
- 10
For additional browning, switch the oven to the broiler setting and broil for 2–3 minutes, watching carefully to prevent burning.
- 11
Sprinkle with the chopped parsley and serve hot with cornbread, mashed potatoes, or crusty bread.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Do not overcrowd the dish or baking sheet so the vegetables can brown; the broiling time requires constant attention.
