Ingredients

  • 4 apples (Cored and chopped; the author used two Granny Smith and two Pink Lady apples.)
  • 150 ml water
  • salt (A pinch, for the stewed apples.)
  • 2 tbsp brown sugar (For the stewed apples.)
  • cinnamon (A shake, for the stewed apples.)
  • vanilla extract (A dash, for the stewed apples.)
  • 1 tsp cornstarch (Heaped; for the stewed apples.)
  • 30 g oat flour (For the crumble topping; the author notes this is oats blitzed up.)
  • 1 tbsp oats (Heaped; for the crumble topping.)
  • 40 g brown sugar (For the crumble topping.)
  • 40 g butter (Melted; for the crumble topping.)
  • 2 eggs (For the baked oats.)
  • 300 ml milk (The author used almond milk; type not otherwise specified in the full recipe.)
  • 80 g mashed banana (About 1 banana, mashed.)
  • 1 tsp vanilla extract (For the baked oats.)
  • 180 g oats (For the baked oats.)
  • 50 g oat flour (For the baked oats; the author notes oat flour can be made by blitzing oats.)
  • 1 tsp baking powder (For the baked oats.)
  • 1 tsp cinnamon (For the baked oats.)
  • salt (A pinch, for the baked oats.)

Steps

  1. 1

Preheat the oven to 160°C fan. Set out an unlined 8-inch square tin, as specified in the recipe.

  2. 2

Add the chopped apples to a saucepan with the water, salt, cinnamon, brown sugar, and vanilla extract. Put the lid on and cook over medium heat, removing the lid occasionally to stir.

  3. 3

After 10 minutes, remove the lid. Spoon 2 tablespoons of the cooking liquid into a small bowl, add the cornstarch, and whisk until smooth.

  4. 4

Stir the cornstarch mixture into the saucepan and cook the apples for 1 minute more.

  5. 5

While the apples cook, stir the oat flour, oats, and brown sugar for the crumble topping together in a small bowl.

  6. 6

Pour the melted butter into the crumble mixture and stir until everything is coated. Place the bowl in the fridge until ready to use.

  7. 7

In a large mixing bowl, stir the eggs, mashed banana, and milk until fully combined.

  8. 8

Stir the oats, oat flour, baking powder, cinnamon, and salt into the egg mixture.

  9. 9

Spread the stewed apples over the base of the unlined square tin.

  10. 10

Pour the baked-oat mixture over the apples, making sure the apples are fully covered.

  11. 11

Crumble the chilled buttery-oat topping evenly over the surface.

  12. 12

Bake for 30–35 minutes, until the top is beautifully golden.

  13. 13

Allow the baked oats to cool for a few minutes before slicing and serving.
