Ingredients

  • 1 second cooking spray (small amount)
  • 11 oz soon tofu (soft silken tofu)
  • 100 g shrimp (peeled and deveined)
  • 2 egg (beaten)
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • white pepper powder (dash)
  • 1 tsp chicken powder (bouillon powder)
  • 1 tsp sesame oil
  • 1 stalk scallions (chopped for garnish)

Steps

    Apply a small amount of cooking spray to a nonstick pan or frying pan.

    Place the soft (soon) tofu and shrimp into the pan.

    In a small bowl, beat 2 eggs and gently pour them over the tofu and shrimp.

    Cover the pan with a lid and cook on medium heat for 4 to 6 minutes.

    While the tofu and eggs cook, prepare the sauce by mixing together the soy sauce, oyster sauce, white pepper powder, chicken powder, and sesame oil.

    Pour the sauce mixture into the pan, cover again, and cook for an additional 2 minutes until the eggs are fully set and cooked through.

    Garnish with chopped scallions and serve immediately.

Notes

This recipe is very flexible and can be made in any nonstick cookware with a lid. For best results, use 'Soon' tofu (extra soft silken tofu). If you don't have chicken powder, you can use a small amount of chicken bouillon or salt to taste.
