Ingredients

  • 500 g shrimp (peeled and deveined)
  • 1 tsp salt
  • 1 tsp white pepper
  • 1 tsp garlic powder
  • 0.5 tsp red chilli flakes (for the shrimp coating)
  • 1 egg
  • 2 tbsp corn flour (cornstarch)
  • 1.5 cup plain flour (for coating)
  • oil (for deep frying)
  • 2 tbsp chilli oil or neutral oil (use either chilli oil or neutral oil)
  • 1 tbsp chilli crisp
  • 1 tsp red chilli flakes (for the sauce)
  • 2 red chillies (sliced)
  • 2 limes (sliced)
  • 2 lime juice (juice of 2 limes)
  • 2 tbsp honey

Steps

  1. 1

In a bowl, mix the shrimp with the salt, white pepper, garlic powder, ½ teaspoon red chilli flakes, egg, and corn flour until evenly coated.

  2. 2

Coat each shrimp in plain flour, shaking off the excess.

  3. 3

Heat oil for deep-frying to 175–180°C (347–356°F). Fry the shrimp for 2–3 minutes, until golden and crispy, then drain.

  4. 4

Heat the measured chilli oil or neutral oil in a pan.

  5. 5

Add the chilli crisp, 1 teaspoon red chilli flakes, sliced red chillies, and sliced limes to the hot oil.

  6. 6

Add the juice of 2 limes and the honey. Warm the sauce for 30–60 seconds.

  7. 7

Pour the sauce over the crispy shrimp and toss well to coat. Serve.
