Ingredients
- 1.5 lb potatoes (peeled and cubed or sliced)
- 3 tbsp cooking oil (for frying)
- Cajun seasoning (to taste)
- black pepper (to taste)
- onion powder (to taste)
- paprika (to taste)
- 3 fresh garlic (cloves, minced)
- 1 onions (sliced)
- 0.5 cup water or chicken broth
Steps
- 1
Heat oil in a large skillet over medium-high heat. Add the potatoes and fry them, stirring occasionally.
- 2
Season the potatoes with Cajun seasoning, black pepper, onion powder, and paprika while they fry.
- 3
When the potatoes start to turn a bit golden, add the sliced onions and minced fresh garlic to the pan.
- 4
Continue to fry until the potatoes and onions turn golden brown and crispy on the outside. Note that they may look done on the outside before being cooked through.
- 5
Add 1/2 cup of water or chicken broth to the skillet.
- 6
Cover the skillet with a lid and reduce heat to medium. Cook until the liquid has evaporated and the potatoes are tender and cooked through.
Notes
The author notes that it is normal for the potatoes to become golden and crispy before they are fully cooked through, which is why the liquid and steaming step is essential.
