Ingredients
- 1 lb Kasi boerewors sausage (or one standard package of Colcom Kasi boerewors)
- 1 Onion (sliced for sautéing)
- 2 Tomatoes (diced)
- Italian seasoning (to taste)
- All-purpose seasoning (to taste)
- Salt (to taste)
- 2 tbsp Ketchup
- 1 tsp Worcestershire sauce
- 4 Hotdog rolls
- Mayonnaise or butter (for spreading on rolls)
- 4 Eggs (scrambled)
- 1 Avocado (sliced or mashed for topping)
Steps
- 1
In a large pan over medium heat, sear the boerewors sausage until it is nicely browned on all sides.
- 2
Once browned and cooked through, remove the sausage from the pan and set it aside.
- 3
In the same pan, sauté the sliced onions until they begin to soften.
- 4
Add the diced tomatoes to the pan with the onions.
- 5
Season the mixture with Italian seasoning, all-purpose seasoning, and salt to taste.
- 6
Add the ketchup and Worcestershire sauce to the pan.
- 7
Stir the mixture well and leave it to cook for about 2 to 3 minutes to allow the flavors to meld.
- 8
Return the cooked sausage to the pan to coat it in the sauce and warm it through.
- 9
Slice your hotdog rolls and spread them with a layer of mayonnaise or butter.
- 10
Place a portion of the sausage and sauce into each roll.
- 11
Top the sausage with a portion of scrambled eggs.
- 12
Finish the hotdogs by topping them with fresh avocado slices.
Notes
Boerewors is a traditional South African sausage; if unavailable, a high-quality bratwurst or beef sausage can be substituted. The creator specifically recommends Colcom Kasi boerewors for its juiciness.
