Chicken Mayo Sandwich

Ingredients
- 2 Chicken breast (boiled and shredded)
- 0.5 cup Mayonnaise (adjust for desired creaminess)
- 0.25 cup Red onion (finely diced)
- 0.25 cup Green bell pepper (finely diced)
- 0.25 cup Yellow bell pepper (finely diced)
- 0.5 tsp Black pepper (to taste)
- 0.25 tsp Salt (to taste)
- 0.5 tsp Paprika (for color and mild heat)
- 8 slice Bread (white or whole wheat, toasted if preferred)
- 2 tbsp Butter (for spreading on bread)

Place the chicken breasts in a pot of water and boil until cooked through, approximately 12-15 minutes.

Remove the chicken from the water and allow it to cool slightly. Use two forks to shred the chicken into small pieces.

In a large mixing bowl, combine the shredded chicken with the diced red onion, green bell pepper, and yellow bell pepper.

Add the mayonnaise, black pepper, salt, and paprika to the bowl.

Mix all the ingredients thoroughly until the chicken and vegetables are evenly coated in the mayonnaise and spices.

Butter the slices of bread.

Spread a generous amount of the chicken mayo mixture onto a slice of bread and top with another slice to form a sandwich.

Cut the sandwiches diagonally and serve immediately.
Notes
For extra crunch, you can add finely chopped celery. If you prefer a bit more kick, add a dash of hot sauce or chopped chili.
