Ingredients
- 6 Chicken legs (Make several shallow cuts in them so they absorb the seasoning better.)
- Salt (To taste; used to season the chicken and adjust the sauce.)
- Black pepper (To taste.)
- 2 tbsp Paprika
- 7 dientes Garlic (Very finely chopped.)
- 1 ramita Fresh parsley (Finely chopped; approximately 10 g.)
- 0.5 cup Butter
- Olive oil (A splash, for browning the chicken.)
- Water or white wine (A splash, to create steam and help form the sauce.)
Steps
- 1
Pat the chicken legs dry with paper towels and make several shallow cuts in the thickest part. This helps the seasoning penetrate and allows the chicken to cook evenly.
- 2
Season the legs all over with salt, black pepper, and paprika. Massage them with your hands to distribute the seasonings well, including inside the cuts.
- 3
Finely chop the garlic cloves. Also chop the parsley into small pieces.
- 4
Melt the butter in a large skillet or saucepan over medium-low heat. Add the chopped garlic and parsley and mix them with the butter to make the aromatic garlic butter. Cook only long enough for the garlic to flavor the butter without burning, approximately 1-2 minutes.
- 5
Heat a large skillet over medium-high heat and add a splash of olive oil. Once it is hot, place the chicken legs in the skillet without overlapping them.
- 6
Brown the legs on all sides, turning them as each surface develops a golden color. This usually takes approximately 8-10 minutes in total; the chicken does not need to be fully cooked yet.
- 7
Pour the garlic and parsley butter over the browned legs, making sure to coat them completely. Add a splash of water or white wine and adjust the sauce with a little more salt if necessary.
- 8
Cover the skillet or saucepan, reduce the heat to low, and cook for approximately 20-25 minutes. The chicken should release its juices and combine with the butter and liquid, forming a thick sauce; the legs are ready when they reach 74 °C in the thickest part, without touching the bone.
- 9
Uncover and let the sauce simmer gently for 2-3 minutes if it needs to thicken. Spoon the sauce over the legs, remove from the heat, and serve hot, ideally with rice to make the most of the garlic sauce.
Notes
The transcript mentions water or white wine for cooking, although it does not appear in the written ingredient list. The amount of oil, salt, pepper, and liquid is approximate, so adjust them according to taste and the size of the skillet. Do not let the garlic burn, as it can make the sauce bitter.
