Ingredients

  • 3 cup water for cooking the rice
  • 1 cup white rice
  • 2 cinnamon sticks (Use 1 or 2 sticks, according to your taste.)
  • 8 tbsp whole milk powder (Dissolve in 2 cups of water; this is equivalent to 4 tablespoons per cup of water.)
  • 2 cup water for preparing the milk (Mix with the milk powder and keep warm before adding it.)
  • 0.5 cup sweetened condensed milk
  • 0.5 cup table cream or half-and-half (Use whichever option is available.)
  • 2 tbsp sugar
  • salt (A pinch.)
  • 2 egg yolks (Optional, although the author recommends adding them because they make a difference.)
  • ground cinnamon (Optional, for sprinkling before serving.)

Steps

    Prepare the milk: mix the whole milk powder with the 2 cups of water and heat until warm, without letting it boil. Keep it ready to add later.

    Place the cooking water, cinnamon sticks, and rice in a large pot. Cook over low heat for approximately 15 minutes, or until the rice has absorbed most of the liquid.

    Add the warm milk to the rice. Add the egg yolks and sugar, and stir with a spoon until combined. Stir frequently, approximately every 5 minutes, to prevent the rice from sticking and to distribute the yolks evenly.

    When the mixture comes back to a boil, add the sweetened condensed milk. Continue stirring and cook until the rice is completely tender and the mixture reaches a thick, creamy consistency.

    Add the table cream or half-and-half. Cook for 5 more minutes, stirring constantly, until the cream is incorporated and the rice pudding is silky.

    Turn off the heat and remove the pot from the stove. Remove the cinnamon sticks before serving.

    Serve the tres leches rice pudding hot or let it cool, according to your taste. If desired, sprinkle with ground cinnamon just before serving.

Notes

The milk should be warm when added, as indicated by the recipe's tip. The texture will thicken slightly as it cools; if refrigerated, cover it and preferably consume it within 3 to 4 days.
