Ingredients

  • 1 Egg
  • 1.25 cup Milk (For the pancake batter)
  • 0.25 cup Oil or butter (Use oil or melted butter; butter was used for the nutritional estimate)
  • 1.5 cup All-purpose flour
  • 2 tsp Baking powder
  • 1 tbsp Sugar (For the pancake batter)
  • 0.25 tsp Salt
  • 4 tbsp Softened butter (For the cinnamon sugar filling)
  • 0.25 cup Sugar (For the cinnamon filling)
  • 2 tsp Ground cinnamon (For the filling)
  • 1 cup Powdered sugar (For the glaze)
  • 1 tbsp Milk (For the glaze)

Steps

  1. 1

In a bowl, whisk the egg with the milk and oil or melted butter until fully combined.

  2. 2

In another bowl, mix the flour, baking powder, sugar, and salt.

  3. 3

Pour the wet ingredients into the dry ingredients and gently mix until a uniform batter forms. Do not overmix; a few small lumps are acceptable.

  4. 4

In a small bowl, stir the softened butter, sugar, and cinnamon until a smooth paste forms.

  5. 5

Transfer the cinnamon filling to a plastic bag and snip off a small corner so you can pipe the spiral.

  6. 6

Heat a nonstick skillet over medium heat. Lightly grease it if necessary.

  7. 7

Pour a portion of batter into the skillet to form a pancake. Cook until the surface begins to form bubbles and the edges look firmer.

  8. 8

Squeeze the filling directly onto the batter in a spiral, starting from the center and leaving enough space between the lines.

  9. 9

Cover the skillet and cook for approximately 2 minutes, until the pancake is fluffy and the bottom is golden brown. Repeat with the remaining batter and filling to make 8 pancakes.

  10. 10

To prepare the glaze, mix the milk with the powdered sugar until smooth and fluid enough to drizzle.

  11. 11

Serve the pancakes hot and drizzle them with the powdered sugar glaze.

Notes

The recipe indicates that it is ready in under 5 minutes of cooking time. If the glaze is too thick, add a few more drops of milk; if it is too runny, mix in a little more powdered sugar.
