In-N-Out at Home Burger
A faithful recreation of the classic In-N-Out burger, featuring animal-style caramelized onions, a signature spread, and mustard-seared beef patties on toasted brioche buns.

Ingredients
- 1.5 lb ground beef (80/20 blend)
- iceberg lettuce (for topping)
- tomatoes (sliced)
- American cheese (slices; sharp cheddar also works)
- 4 brioche buns
- salt (to taste)
- black pepper (to taste)
- 2 white onions (large, diced)
- 1 tbsp olive oil
- 2 tbsp butter (plus extra for toasting buns)
- 1 tsp granulated sugar (for onions)
- 0.5 tsp salt (for onions)
- 1 cup mayonnaise
- 0.25 cup ketchup
- 0.25 cup caramelized onions (from the prepared batch)
- 0.25 cup pickles (finely chopped)
- 1 tbsp yellow mustard (for sauce, plus extra for searing patties)
- 1 tsp distilled white vinegar
- 1 tsp sugar (for sauce)
- 0.5 tsp salt (for sauce)
- 0.25 tsp black pepper (for sauce)

In a medium bowl, combine mayonnaise, mustard, ketchup, 1/4 cup of the caramelized onions (once they are cooked), pickles, salt, pepper, sugar, and vinegar together.

Cover the sauce and refrigerate while you prepare the rest of the ingredients.

Heat a small pan over low heat with 1 tbsp olive oil and 2 tbsp butter.

Add the diced white onions, sugar, and salt. Cook slowly for 15–20 minutes, stirring occasionally, until soft, golden brown, and sweet. Set aside.

Divide the ground beef into 4 equal portions (about 100g or 3.5 oz each).

Roll each portion into a ball, then flatten into thin patties about 1/4-inch thick. Make them slightly wider than the bun as they will shrink during cooking.

Season one side of each patty generously with salt and pepper. Keep chilled until ready to cook.

Cut the brioche buns in half and lightly butter the cut sides.

Toast the buns cut-side down in a dry skillet or griddle over medium heat until golden and crispy. Remove and set aside.

Heat a skillet or griddle over medium-high heat and add a thin layer of oil.

Add the patties to the skillet (2 at a time to avoid overcrowding).

Cook for 2 minutes on the first side until browned. While the first side cooks, add a dollop of mustard to the raw side and spread it evenly.

Flip the patties and immediately add a slice of American cheese to each.

Cook for another 1–2 minutes until the cheese is melted and the patty is cooked through.

Assemble the burgers by spreading sauce on the buns and adding the patties, lettuce, tomato slices, and extra caramelized onions.
Notes
For a true 'Animal Style' experience, ensure you spread the mustard on the patty before flipping to sear the flavor into the meat. The patties should be very thin to mimic the fast-food style.
