Weights are estimates. Together, the ingredients weigh about 420 g before cooking, which is about 70 g per serving.
Steps
Slice the hard-boiled eggs in half lengthwise. Remove the yolks and place them in a medium mixing bowl. Set the egg white halves aside on a serving platter.
Mash the egg yolks with a fork until they are fine and crumbly.
Add the mayonnaise, crumbled blue cheese, olive brine, gin (if using), Dijon mustard, and garlic powder to the bowl with the yolks.
Mix until the filling is smooth and creamy. Season with salt and black pepper to taste.
Spoon or pipe the yolk mixture back into the centers of the egg white halves.
Garnish each egg with half a pimento-stuffed olive and a sprinkle of fresh parsley.
Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
For a non-alcoholic version, simply omit the gin; the olive brine provides plenty of 'dirty martini' flavor. If you aren't a fan of blue cheese, you can substitute it with extra mayonnaise or a touch of cream cheese, though the blue cheese is the 'secret ingredient' mentioned by the author.
