Steps
Preheat the oven to 325°F (160 °C) (165°C (325 °F)). Grease and flour a Bundt pan or tube pan.
In a large mixing bowl, cream the room-temperature salted butter and white sugar together until light and fluffy.
Add the room-temperature eggs one at a time, mixing well after each addition.
Gradually add the all-purpose flour, mixing only until just combined.
Stir in the lemon zest.
Gently fold in the 7UP until the batter is smooth.
Pour the batter into the prepared pan and smooth the top with a spatula.
Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cake in the pan for 10 minutes. Remove it from the pan and transfer it to a wire rack to cool completely; for a thicker glaze, wait two hours before glazing.
In a small bowl, whisk the powdered sugar and lemon juice together until smooth. Add more lemon juice as necessary.
Drizzle the glaze over the cooled cake.
Slice and serve.
Notes
