Ingredients

  • 400 g boneless, skinless chicken thighs (Make a few shallow slits in the thighs.)
  • 2 tbsp ginger garlic paste
  • 1 tsp salt
  • 1 tsp chili flakes
  • 1 tsp black pepper (The source also refers to this as pepper powder.)
  • 1 tsp dried oregano
  • 0.5 tsp sugar
  • 20 ml lime juice (Juice of 1 whole lime.)
  • 1 tbsp ghee
  • fresh coriander (A handful, for garnish.)
  • lime juice (Juice of ¼ lime, for garnish.)
  • 1 tsp chaat masala (For garnish.)
  • 3 tbsp high-protein Greek yogurt (For the dip.)
  • 2 cloves garlic (Finely minced; for the dip.)
  • 1 tbsp fresh coriander (Chopped; for the dip.)
  • lime juice (Juice of ¼ lime; for the dip.)
  • 0.25 tsp salt (For the dip.)
  • 0.5 tsp black pepper (For the dip.)

Steps

  1. 1

Place the chicken thighs in a bowl. Make a few shallow slits in each thigh so the marinade can penetrate.

  2. 2

Add the ginger-garlic paste, salt, chili flakes, black pepper, oregano, sugar, lime juice, and ghee to the bowl.

  3. 3

Coat the chicken thighs thoroughly in the marinade, making sure the seasoning covers all sides.

  4. 4

Set the chicken aside to marinate for 30 minutes, or overnight for the best flavor. If short on time, cook it immediately.

  5. 5

Heat a pan over medium heat. Add the marinated chicken along with all of the marinade.

  6. 6

Fry the chicken for 8 minutes on the first side.

  7. 7

Turn the chicken over and fry for another 8 minutes, for 16 minutes total, until cooked through.

  8. 8

Garnish the cooked chicken with fresh coriander, the juice of ¼ lime, and chaat masala.

  9. 9

For the dip, combine the high-protein Greek yogurt, minced garlic, chopped coriander, lime juice, salt, and black pepper in a bowl.

  10. 10

Stir the dip until smooth and serve it alongside the chicken. The dip is optional.
