Ingredients
- 2 lb ground beef, 80% meat and 20% fat
- salt and black pepper (To taste; season the beef while cooking)
- 8 slices American cheese
- oil for cooking (For lightly oiling the griddle or skillet)
- 0.5 cup mayonnaise
- 3 tbsp ketchup
- 2 tbsp relish
- 1 tbsp white vinegar or pickle juice (Use either white vinegar or pickle juice)
- 2 tbsp caramelized onions (For the sauce)
- 1 tbsp Worcestershire sauce
- 0.5 tsp sugar
- salt (To taste for the sauce)
- 0.5 tsp black pepper
- 1 tsp garlic powder
- 6 soft hamburger buns
- 2 large tomatoes (Sliced)
- 0.333 cup caramelized onions (For assembly)
- 0.5 cup pickles
- 1 cup lettuce leaves (Shredded for assembly)
- butter (For buttering the cut sides of the buns)
Steps
- 1
Divide the ground beef into 2–3 oz portions and form each portion into a loose ball. Do not season the beef yet.
- 2
Combine the mayonnaise, ketchup, relish, caramelized onions, salt, garlic powder, sugar, white vinegar or pickle juice, and Worcestershire sauce in a bowl. Stir until smooth.
- 3
Cover the sauce and refrigerate it for at least 30 minutes so the flavors can meld.
- 4
Heat a griddle or heavy skillet over high heat. Lightly oil the cooking surface.
- 5
Place the beef portions on the hot surface and immediately smash each one into a thin patty.
- 6
Season the patties with salt and pepper while they cook.
- 7
Cook the patties for 1–2 minutes, until the edges are crisp.
- 8
Flip the patties and place one slice of American cheese on each patty. Continue cooking until the cheese is fully melted.
- 9
Stack two cheesy patties together to form each double portion, allowing the melted cheese to bind the layers.
- 10
Butter the cut sides of the hamburger buns. Toast them on a flat-top or skillet until lightly golden, then set them aside.
- 11
Spread a layer of sauce over the bottom bun.
- 12
Add the pickles, shredded lettuce, and tomato slices to each bottom bun.
- 13
Place a double patty portion on top of the vegetables.
- 14
Top each burger with caramelized onions and additional sauce if desired.
- 15
Finish each burger with a top bun and serve.
Notes
The source does not provide instructions for making the caramelized onions, so use prepared caramelized onions. The source lists 6 buns but specifies 2–3 oz beef portions and stacking two patties; the exact number of patties per burger may vary with portion size.
