Weights are estimates. Together, the ingredients weigh about 2.01 kg before cooking, which is about 670 g per serving.
Steps
Place the pork ribs in a container. Cover them with the water and add a small amount of salt and the white vinegar. Let them soak for approximately 20 minutes.
While the ribs are soaking, prepare the marinade by mixing the chopped garlic, chopped scallions, hot oil, salt, white pepper, oyster sauce, and light soy sauce.
Drain the ribs and pour the garlic mixture over them. Mix well so that all the pieces are coated. Let them marinate for 30 minutes.
Add an egg to the marinated ribs and mix until evenly incorporated.
Add the cornstarch and mix until each rib has a thin, even coating.
Heat enough oil in a skillet or deep container for frying. Add the coated ribs once the oil is hot.
Fry the ribs until golden and crispy on the outside and cooked through on the inside. Remove them from the oil and drain.
Serve the crispy ribs with sliced red onion on top or on the side.
Notes
The quantities of several marinade ingredients and the oil are not specified in the source; they have been estimated for approximately 700 g of ribs. The source does not specify the oil temperature or exact frying time; fry until the ribs are golden, crispy, and fully cooked.
