Ingredients

  • 3 tbsp Salted butter (Use 1 tbsp to wilt the spinach and 2 tbsp for the onion.)
  • 500 g Spinach (Add about 200 g at a time while wilting.)
  • 70 g Small white onion (70 g; finely diced.)
  • 2 cloves Garlic (Finely diced.)
  • 180 ml Double cream
  • Salt (1 big pinch (½–1 tsp), to taste.)
  • 0.125 tsp Black pepper
  • 0.25 tsp Whole nutmeg (Grated.)
  • 20 g Parmesan (Grated; reserve some for the optional topping if desired.)
  • Cheese for topping (Optional; creator used mozzarella, cheddar, and a final grating of Parmesan. Amounts not stated.)

Steps

  1. 1

Heat a frying pan over medium-high heat and add 1 tbsp of the butter.

  2. 2

Add the spinach in batches of about 200 g. Let each batch wilt before adding more, continuing until all the spinach is wilted.

  3. 3

Transfer the wilted spinach to a colander. Squeeze out most of the water by hand or with cheesecloth; it does not need to be completely dry.

  4. 4

Return the frying pan to medium-high heat and add the remaining 2 tbsp butter, followed by the diced onion.

  5. 5

Fry the onion, stirring, for a few minutes until translucent and softened.

  6. 6

Add the diced garlic and fry for another 1–2 minutes, stirring continuously.

  7. 7

Reduce the heat to medium-low. Add the double cream, salt, black pepper, grated nutmeg, and grated Parmesan.

  8. 8

Mix for about 2 minutes, until the cream has thickened slightly.

  9. 9

Add the wilted spinach and mix it into the sauce. Serve as is, or continue with the optional cheese topping.

  10. 10

For the optional topping, transfer the creamed spinach to a small baking tray and top with cheese, such as mozzarella, cheddar, and a final grating of Parmesan.

  11. 11

Place under the grill for a few minutes, until the cheese is melted, bubbling, and golden, then serve.

Notes

Salt quantity is given as a big pinch (½–1 tsp), to taste. The cheese topping is optional and its quantity is not specified. The source does not give an exact cooking time for wilting the spinach, frying the onion, or grilling the topping.
