Easy Honey Chipotle Chicken

Ingredients
- 1 pack boneless skinless chicken thighs (approximately 1.5 lbs)
- 3 chipotle peppers in adobo sauce (from a 7 oz can)
- 1 lime juice (freshly juiced)
- 1 clove garlic
- 0.5 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp smoked paprika
- 2 tbsp honey
- 1 tbsp extra virgin olive oil (for searing)
- 1 tbsp butter (for searing)

In a blender, combine 3 chipotle peppers from the can, 2 tablespoons of honey, 1 garlic clove, the juice of 1 lime, salt, pepper, garlic powder, onion powder, and smoked paprika.

Blend the ingredients until the mixture is completely smooth.

Add the chicken thighs to a bowl or zip-lock bag and pour the prepared marinade over the chicken.

Mix well, ensuring each piece of chicken is fully and evenly coated in the marinade.

Cover the bowl or seal the bag and marinate in the refrigerator for at least 2 hours, or overnight for the best flavor development.

Heat the olive oil and butter in a large skillet over medium-high heat until the butter is melted and bubbling.

Place the chicken in the skillet and sear on both sides until deep golden brown and cooked through.

Ensure the chicken reaches an internal temperature of 165°F (74°C) using a meat thermometer.

Remove the chicken from the skillet and transfer to a cutting board; let it rest for 5 minutes to allow the juices to redistribute.
