Triple Cheese and Herb Stuffed Chicken Breasts

Ingredients
- 6 chicken breasts (cleaned and cut with a deep pocket)
- 1 package French onion cream cheese (approx. 8 oz)
- 1 package garlic & herb cream cheese (approx. 8 oz)
- 1 package Boursin cheese (divided; half used for stuffing)
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 1 onion (diced)
- 3 cloves garlic (minced)
- 2 cups spinach (fresh)
- 0.5 cup Colby Jack cheese (shredded (estimated amount for stuffing))
- 0.5 cup Mozzarella cheese (shredded (estimated amount for stuffing))
- 0.5 cup Cheddar cheese (shredded (estimated amount for stuffing))
- 2 tbsp butter (for searing)

Clean the chicken breasts and cut a deep pocket into each one, being careful not to cut all the way through.

In a skillet over medium heat, sauté the diced onion and bell peppers until they are softened.

Add the minced garlic to the skillet and cook for 1 minute until fragrant.

Stir in the 2 cups of spinach and cook until wilted, then remove the skillet from heat.

Preheat your oven to 350°F.

In a large bowl, combine the French onion cream cheese, garlic & herb cream cheese, and half of the Boursin cheese.

Add the sautéed vegetables and all three shredded cheeses (Colby Jack, Mozzarella, and Cheddar) to the bowl.

Mix until well combined and creamy, but ensure the mixture is still thick enough to hold its shape.

Season both sides of the chicken breasts with your favorite seasonings, ensuring you season the inside of the pockets as well.

Open each chicken pocket and generously stuff it with the prepared cheese and vegetable mixture.

Melt butter in a large skillet over medium heat.

Sear the stuffed chicken breasts on both sides until golden brown.
