Seared Panela Cheese with Mango Chutney

Ingredients
- 1 panela cheese (block, seasoned with Italian seasoning)
- 2 tbsp red onion (finely chopped)
- 1 red bell pepper (finely chopped)
- 2 cup mango (cubed)
- 0.33 cup white vinegar
- 0.33 cup sugar
- 1 tsp red pepper flakes (or chili flakes)
- 1 tsp salt
- pepper (to taste)
- 1 tbsp olive oil
- chili flakes (optional for garnish)
- chives (bias-cut for garnish)

In a skillet over medium heat, add the olive oil and sauté the red onion along with the red bell pepper for 3-4 minutes.

Add the cubed mango and season with salt and pepper. Cook for a few minutes until the mango begins to soften.

Stir in the white vinegar, sugar, and red pepper flakes. Mix well and increase the heat.

Cook for approximately 10-15 minutes, stirring occasionally, until the chutney reduces and becomes glossy, thick, and caramelized.

Remove from heat and let cool for a few minutes to allow the texture to set.

Meanwhile, season the panela cheese with Italian seasoning. Sear it in a hot skillet on both sides until golden brown.

Serve the chutney over the panela cheese and finish with chives and chili flakes if desired.
Notes
The chutney will have a sticky, sweet, and spicy consistency. It is recommended to let it cool slightly before serving so it thickens properly.
