  • 0.5 cup Corn (Cooked)
  • 1 шт. Yellow onion (Dice)
  • 1 шт. Jalapeño (Chop and remove the seeds; optional)
  • 1 tbsp Lemon juice
  • 4 tbsp Cream cheese
  • 0.25 cup Water
  • 1 tbsp Vegetable oil for the filling (Plus extra for frying)
  • 0.5 cup Mayonnaise (For the sauce)
  • 0.5 cup Sour cream (For the sauce)
  • 1 tbsp Smoked paprika for the sauce
  • 1 tsp Garlic powder for the sauce
  • Salt for the sauce (To taste)
  • Black pepper for the sauce (To taste)
  • 1 tsp Cajun seasoning for the sauce
  • 1 tbsp Lime juice
  • 1 tsp Hot sauce
  • 1.5 tbsp Fresh cilantro (Original: 1–2 tbsp; chop)
  • 1 cup Mixed shredded cheese (The author used mozzarella and cheddar)
  • 10 шт. Mini flour tortillas
  • 2 tbsp Vegetable oil for brushing the tortillas (For brushing the tortillas)

Steps

  1. 1

Place the chicken pieces in a bowl. Add the salt, smoked paprika, garlic powder, black pepper, Cajun seasoning, and 1 tbsp of oil. Toss to coat the chicken evenly with the spices.

  2. 2

Heat a skillet over medium heat and add a little oil.

  3. 3

Place the seasoned chicken in the hot skillet and cook for 3–4 minutes, stirring occasionally.

  4. 4

Add the minced garlic and cook for another 1–2 minutes, until fragrant.

  5. 5

Add the onion, bell peppers, corn, and jalapeño, if using. Stir and cook for 3–4 minutes, until the vegetables have softened slightly and the chicken is fully cooked.

  6. 6

Reduce the heat. Add the cream cheese, lemon juice, and water. Stir until the cream cheese melts and forms a creamy sauce that coats the chicken and vegetables.

  7. 7

If the mixture is too thin, simmer for 1–2 minutes until thickened. Taste and add salt if needed. Remove the filling from the heat.

  8. 8

For the sauce, combine the mayonnaise, sour cream, smoked paprika, garlic powder, salt, black pepper, Cajun seasoning, lime juice, hot sauce, and chopped cilantro.

  9. 9

    Preheat the oven to 400°F / 200°C.

  10. 10

Lightly brush one side of each tortilla with oil.

  11. 11

Turn the tortillas oiled-side down and place the chicken filling on the dry side.

  12. 12

Sprinkle the filling with shredded cheese, then fold the tortillas in half or gently press them closed.

  13. 13

Arrange the tacos on a baking sheet and bake for 10–15 minutes, until the tortillas are crisp and the cheese has melted.

Notes

The original description lists the sauce but does not specify exactly how to serve it; it is assumed to be served with the finished tacos. The amount of oil for frying the filling is not specified. The temperature of 400°F has been converted to approximately 200°C.
