  • 2 lb Chuck Roast (sliced into large even sized chunks)
  • 2 tbsp Salt (divided for seasoning and sauce)
  • 1 tbsp Black Pepper
  • 2 tbsp Vegetable Oil (for searing)
  • 1 Carrot (large, diced)
  • 2 stalks Celery (diced)
  • 1 White Onion (large, diced)
  • 3 Garlic (cloves)
  • 2 tbsp Tomato Paste
  • 4 cup Beef Broth
  • 4 cup Crushed Tomatoes
  • 1 cup Water
  • 2 sprigs Thyme
  • 2 sprigs Rosemary
  • 3 Bay Leaf
  • 500 g Rigatoni Pasta (1 package)
  • 0.5 bunch Basil
  • 2 tbsp Fresh Parsley (chopped)
  • 1 cup Parmesan Cheese

    Slice the chuck roast into large, even-sized chunks.

    Season the beef chunks thoroughly with salt and pepper.

    Place a large Dutch oven over medium-high heat and add vegetable oil.

    Sear the beef on all sides until browned, then remove the meat from the pot and set aside.
