Steak Sliders with Cowboy Butter

- 2 lb ribeye or sirloin steak (cut into strips)
- 2 tsp Worcestershire sauce
- 2 tsp garlic powder
- 1 tsp soy sauce
- salt and pepper (to taste (generous amount))
- 8 oz smoked provolone cheese (sliced)
- 2 tbsp avocado oil (for searing)
- 12 brioche slider buns (one standard pack)
- 2.5 yellow onion (medium, sliced)
- 1 tsp granulated sugar
- salt (a generous pinch for the onions)
- 8 tbsp unsalted butter (for the cowboy butter)
- 5 garlic (minced cloves)
- 1 shallot (minced)
- 0.5 lemon (freshly squeezed)
- 1 tbsp Dijon mustard
- 1 tbsp parsley (chopped (heaping tablespoon))
- 1 tbsp chives (chopped (heaping tablespoon))
- 1 tsp thyme
- 1 tsp cayenne pepper (adjust to taste)
- 0.5 tsp red chili flakes
- 0.5 tsp smoked paprika
- 0.25 cup unsalted butter (melted, for the garlic butter)
- 2 tbsp fresh parsley (freshly chopped)
- 1 tsp garlic powder (heaping teaspoon for the topping)

In a large bowl, mix the steak strips with the Worcestershire sauce, 2 tsp garlic powder, soy sauce, salt, and pepper. Ensure the meat is well coated and let marinate while preparing the rest of the ingredients.

For the caramelized onions, heat a little oil in a skillet over medium heat. Add the sliced onions, sugar, and a pinch of salt. Cook, stirring occasionally, until they are golden brown and soft.

Prepare the cowboy butter: in a small skillet or bowl, combine the 8 tbsp of butter, minced garlic, shallot, lemon juice, Dijon mustard, parsley, chives, thyme, cayenne, chili flakes, smoked paprika, and salt to taste. Mix well until fully combined.

Heat the avocado oil in a large skillet over high heat. Sear the steak strips in batches to avoid crowding the pan, cooking until well browned on the outside but still juicy inside. Remove from heat.

Preheat the oven to 375°F (190°C). Slice the brioche buns horizontally in half (do not separate individual buns if they come in a connected block).

Place the bottom half of the buns on a baking sheet. Spread a generous layer of the cowboy butter over the bread.

Distribute the seared steak strips over the butter, followed by the caramelized onions and the smoked provolone cheese slices.

Place the top half of the buns over the cheese.

Prepare the garlic butter by mixing the 1/4 cup melted butter with the chopped parsley, garlic powder, and salt. Generously brush the tops of the buns with this mixture.

Bake for 10-15 minutes or until the cheese is completely melted and the tops of the buns are golden and crispy.
Notes
You can use ribeye for a more intense flavor and higher fat content, or sirloin for a leaner option. Adjust the cayenne pepper according to your spice tolerance.
