Shredded tofu is browned until golden, coated in a savory herb-and-spice marinade and barbecue sauce, then piled onto buns with vegan mayo, pickles, and coleslaw. The tofu’s shredded texture helps it soak up the flavors while crisping in the pan.

Weights are estimates. Together, the ingredients weigh about 635 g before cooking, which is about 160 g per serving.
Steps
If using super-firm tofu, use the vacuum-packed kind, which does not require pressing. If using extra-firm tofu, press it for at least 30 minutes; the source notes it may not become as crispy.
In a bowl, whisk together the vegan mayonnaise, soy sauce, white vinegar, water, nutritional yeast, garlic powder, onion powder, smoked paprika, dried parsley, and dried thyme to make the marinade.
Using the large holes of a cheese grater, grate the tofu.
Heat a non-stick or well-seasoned pan over medium heat. Add about 1 tablespoon of cooking oil.
Add half the grated tofu to the pan, spreading it into an even layer without overcrowding. Cook without stirring for 3–4 minutes, or until golden brown.
Flip the tofu and cook the other side until browned to your liking. Remove it from the pan.
Repeat the pan-frying process with the remaining tofu.
Pour the marinade over the cooked tofu and stir to combine.
Cook for another 3–4 minutes, or until browned to your liking.
Add 1/4 cup BBQ sauce and stir it into the tofu. Add more, up to 1 cup total, as desired.
Toast the burger buns if desired.
Assemble each sandwich with vegan mayonnaise, pickles, coleslaw, and BBQ tofu, then serve.
Notes
The source does not specify the quantities of buns, sandwich mayo, pickles, or coleslaw. The BBQ sauce amount is a range: start with 1/4 cup and add more as desired, up to 1 cup.
