Weights are estimates. Together, the ingredients weigh about 665 g before cooking, which is about 30 g per serving.

Steps

  1. Combine all the ingredients for the marinade in a large bowl.

  2. Slice the tofu into thin strips with a sharp knife, mandolin, or cheese slicer.

  3. Dip each tofu strip in the marinade, coating it thoroughly. Let excess marinade drip off.

  4. For the baking method, preheat the oven to 375°F (190 °C) (190°C (375 °F)).

  5. Line a large baking sheet with parchment paper or a wire rack. Place the coated tofu slices on the sheet.

  6. Bake for 25 minutes, then flip the tofu slices.

  7. Bake for another 15–25 minutes, checking about every 10 minutes to prevent burning. If edges begin to blacken, take the tofu out. It may not seem very crisp while hot; let it rest for a few minutes to crisp as it cools.

  8. For the original air-fryer method, lightly spray the air-fryer basket or tray with oil. Arrange as many tofu slices as will fit without overlapping.

  9. Air-fry at 375°F (190 °C) (190°C (375 °F)) for 6 minutes, then flip the slices.

  10. Air-fry for another 6 minutes, or until crispy, keeping an eye on them so they do not burn. Let cool for a few minutes; they will crisp further as they cool.

  11. For the updated method, slice the tofu thinly and spray it with cooking oil.

  12. Air-fry at 375°F (190 °C) for about 8–10 minutes, or until browned and crispy.

  13. For the simplified marinade, whisk together the vegan mayonnaise, soy sauce, liquid smoke, vegan Worcestershire, Sriracha, and MSG or salt to taste. For better emulsification, blend instead of whisking. For color, you can also use 1–2 teaspoons of browning sauce or dark soy sauce.

  14. Dip the air-fried tofu slices in the simplified marinade and coat them thoroughly.

  15. Return the coated tofu to the air fryer and cook for 2–3 minutes, watching closely to prevent burning. Enjoy immediately; the author describes this version as super crispy.

Notes

The updated method is included in the source as a separate, preferred cooking approach, but its simplified marinade is distinct from the original measured marinade. Its ingredients are: 1 tbsp vegan mayonnaise, 2 tbsp soy sauce, 1/2 tsp liquid smoke, 1 tbsp vegan Worcestershire, 1 tsp Sriracha, 1 tsp MSG or salt to taste, and optionally 1–2 tsp browning sauce or dark soy sauce. The source does not specify amounts for the oil spray. The listed recipe yield is 24 slices; serving count is estimated as 24 slices. The original recipe also gives an air-fryer method, so the cook should choose a cooking method rather than perform all three.
