Ingredients

  • 500 g Peeled and deveined shrimp (Preferably raw; ready to cook)
  • 0.5 White onion (Finely chopped)
  • 0.5 Red bell pepper (Finely chopped)
  • 0.25 cup Fresh cilantro (Chopped; use a generous amount to taste)
  • 0.5 cup Mayonnaise (Add a generous amount, to taste)
  • 0.25 cup Ketchup (Add to taste)
  • 1 tbsp Sriracha (Optional; adjust according to the desired level of heat)
  • 2 Lime juice (Freshly squeezed)
  • Salt (To taste, for seasoning the shrimp and adjusting the seasoning at the end)
  • Sugar (A pinch, to balance the flavors)
  • Ice (Plenty, to stop the shrimp from cooking)

Steps

    Finely chop the white onion, red bell pepper, and cilantro. Have them ready in a large bowl to mix later.

    Prepare a large bowl with plenty of ice and cold water. This ice bath will be used to immediately stop the shrimp from cooking.

    Heat a pot with enough water to cover the shrimp. When the water is boiling, add salt to taste.

    Add the shrimp to the boiling water and cook for approximately 3 minutes, until pink, opaque, and firm. Watch them closely to prevent overcooking.

    Remove the shrimp from the pot and immediately transfer them to the bowl of ice and cold water. Let them cool briefly to stop the cooking, then drain them very well.

    Place the chilled, drained shrimp in the bowl with the chopped onion, bell pepper, and cilantro.

    Add the mayonnaise, ketchup, sriracha, lime juice, a pinch of sugar, and a little more salt.

    Gently stir until all the shrimp are coated with the sauce and the vegetables are evenly distributed. Taste and adjust the salt, lime juice, or sriracha as needed.

    Serve the cocktail well chilled in individual glasses. Garnish with cilantro or a lime wedge, if desired.
