Special Siu Mai Sauce

Ingredients
- 0.5 cup water (estimated for the sauce base)
- 0.25 cup low-sodium soy sauce (Proluxsa brand recommended)
- 2 tbsp brown sugar (to balance the flavor)
- 3 fresh ginger (small pieces or slices for flavoring)
- 1 tsp cornstarch (dissolved in a bit of water to thicken)
- scallions (fresh and chopped for garnish when serving)

In a small saucepan, pour in the water and the low-sodium soy sauce.

Add the brown sugar to the mixture and turn on the heat so the sugar dissolves completely.

Incorporate the fresh ginger pieces to flavor the sauce as it heats up.

Add a little cornstarch (previously dissolved in a drop of cold water) so the sauce begins to gain body.

Stir all ingredients well and let it reduce over low heat until it reaches the desired consistency.

Remove from heat and let cool; the sauce will thicken a bit more as it cools down.

Serve over your siu mai or gyozas and finish with plenty of fresh chopped scallions on top.
Notes
The ideal consistency is achieved once the sauce cools. It is recommended to use low-sodium soy sauce to prevent the result from being excessively salty upon reduction.
