Ingredients

  • 500 g lamb mince
  • 1 green chilli (finely chopped, or to taste)
  • 1 handful fresh coriander (chopped)
  • 1 tsp ginger (heaped, grated)
  • 1 tsp garlic (heaped, grated)
  • 1 tbsp coriander seeds (dry toasted and lightly crushed)
  • 1.5 tsp garam masala
  • 1 tsp cumin powder
  • tsp paprika (quantity not specified in source)
  • tsp salt (for the patties)
  • 1 egg
  • 4 tbsp plain yogurt
  • 1 lemon
  • salt (pinch, for the sauce)
  • 0.5 cucumber (grated or finely chopped, for the sauce)
  • 1 tsp extra virgin olive oil
  • 4 brioche or soft burger buns
  • feta (for topping)
  • 1 handful fresh coriander (for garnish)
  • 1 tsp butter
  • 1 clove garlic (crushed)
  • 0.25 cucumber (very thinly sliced, for layering)
  • 1 tomato (sliced)

Steps

  1. 1

Dry toast the coriander seeds in a small pan over medium heat until fragrant, then lightly crush them.

  2. 2

In a large bowl, combine the 500g lamb mince, chopped green chilli, a handful of chopped fresh coriander, 1 heaped tsp grated ginger, and 1 heaped tsp grated garlic.

  3. 3

Add the crushed coriander seeds, 1½ tsp garam masala, 1 tsp cumin powder, paprika, and salt to the lamb mixture.

  4. 4

Add 1 egg to the bowl and mix everything together thoroughly until well combined.

  5. 5

Shape the mixture into 4 burger patties.

  6. 6

Cook the patties on a barbecue or in a pan with 1 tsp extra virgin olive oil until browned and cooked through to your preference.

  7. 7

Prepare the yogurt sauce by mixing 4 tbsp plain yogurt, the juice of 1 lemon, a pinch of salt, and ½ a grated or finely chopped cucumber in a small bowl.

  8. 8

Melt 1 tsp butter and mix with 1 crushed garlic clove. Brush this onto the burger buns and toast them until golden.

  9. 9

Assemble the burgers by placing the lamb patty on the toasted bun, followed by the yogurt sauce, sliced tomato, thinly sliced cucumber, crumbled feta, and fresh coriander.

Notes

The author emphasizes that toasting the coriander seeds is the most important step for the flavor profile of the burger. The paprika and salt quantities for the patties were listed without measurements in the source; use approximately 1/2 to 1 tsp each.
