Ingredients

  • 1.5 cup almond flour
  • 1 tbsp cocoa powder (For the base)
  • 0.333 cup coconut oil (Melted)
  • 2 tbsp honey
  • 1.5 avocados
  • 1 cup dark chocolate
  • 0.25 cup coconut cream
  • 0.25 cup maple syrup
  • 0.333 cup cocoa powder (For the ganache)
  • 1 tsp vanilla extract
  • salt (1 pinch)
  • cocoa powder (A tiny sprinkle, to finish)
  • whipped cream (For serving; amount not specified)

Steps

  1. 1

Preheat the oven to 180°C (350°F).

  2. 2

In a bowl, mix the almond flour, 1 tablespoon cocoa powder, melted coconut oil, and honey until combined.

  3. 3

Press the mixture into a baking tin to form the base.

  4. 4

Bake for 10 minutes, until golden. Leave the base to cool completely.

  5. 5

Add the avocados, dark chocolate, coconut cream, maple syrup, ⅓ cup cocoa powder, vanilla extract, and a pinch of salt to a blender. Blend until smooth.

  6. 6

Pour the ganache over the cooled biscuit base.

  7. 7

Refrigerate for at least 4 hours or overnight, until set.

  8. 8

Finish with a tiny sprinkle of cocoa powder, then slice into bars. Top with whipped cream and serve.
