- 2 tsp unflavored gelatin

- 2 tbsp caramel sauce (homemade or store-bought, for serving)
Steps

In a mixing bowl or large measuring cup, combine 2 tablespoons of instant coffee with the boiling water.
- 3
Add 1 cup of cold water, 1/3 cup of brown sugar, and 2 teaspoons of unflavored gelatin to the coffee mixture.

Place in the refrigerator for at least 2 hours, or until the jelly has completely set.

Once the jelly is set, prepare the cream topping by mixing heavy whipping cream with caramel sauce in a separate glass.
- 8
Break up the jelly slightly or cut into cubes, then pour the caramel-cream mixture over the top and stir gently to combine before serving.
Notes
The author suggests this is one of the best things he has ever tasted. You can adjust the sweetness by varying the amount of brown sugar or caramel sauce. For a cleaner presentation, set the jelly in a flat dish and cut into uniform cubes before serving.
