Weights are estimates. Together, the ingredients weigh about 1.2 kg before cooking, which is about 300 g per serving.

Steps

  1. Rinse the pork shoulder and pat it dry. Cut it into long strips and place in a large bowl.

  2. Add the char siu sauce, oyster sauce, light soy sauce, dark soy sauce, honey, cooking wine (or rice wine), ginger slices, and scallion segments.

  3. Mix well by hand, making sure each piece of pork is evenly coated in the sauce. Massage for a few minutes to help the flavors penetrate.

  4. Cover with plastic wrap and refrigerate to marinate for at least 8 hours or overnight. You can also marinate it in the morning and cook it in the evening.

  5. Lightly coat the bottom of the rice cooker’s inner pot with cooking oil. Add the marinated pork strips and pour in the remaining marinade.

  6. Press the rice cooker’s “Cook” button.

  7. When the cooking cycle ends, turn the pork over and press “Cook” again, or use the “Reduce” function, until the sauce thickens and evenly coats the meat.

  8. Remove the char siu and let it cool slightly before slicing and plating. Drizzle with the honey glaze remaining in the pot and serve.

Notes

If your rice cooker has a “Quick Cook” or “Cake” mode, you can use that as well. The longer it marinates, the more flavorful it will be. For a crispier finish, you can air-fry it at 180 degrees for 3-5 minutes at the end.
