Weights are estimates. Together, the ingredients weigh about 1.97 kg before cooking, which is about 985 g per serving.
Steps
Heat the butter in a skillet over medium heat. Add the chicken breast halves and season both sides with salt and pepper.
Brown the chicken on both sides. Add 1½ tbsp soy sauce and continue cooking until fully cooked and the center reaches 74 °C (165 °F).
Remove the chicken from the skillet and set aside.
In the same skillet, add the minced white parts of the scallions and the minced garlic. Sauté for 1–2 minutes, until fragrant.
Add the gochujang and sauté for about 1 minute, stirring constantly, as you would tomato paste.
Pour in the coconut milk and stir until fully combined. Let the broth come to a gentle simmer.
Add the water, ½ tsp powdered chicken stock, and the sugar. Season with soy sauce to taste.
Let the broth simmer for 5 minutes. Taste and, if needed, add more chicken stock in ½ tsp increments until the flavor is to your liking.
While the broth simmers, cook the eggs for 6½ minutes so the yolks remain jammy.
Immediately transfer the eggs to an ice bath. Once cool, peel and halve them.
Add the ramen noodles directly to the broth and cook according to the package instructions. If they are very starchy, cook them separately in boiling water to keep the broth from getting too thick.
Divide the cooked noodles between two bowls and ladle the creamy broth over them.
Slice the chicken and arrange it on top of the noodles.
Finish each bowl with half an egg and the sliced green parts of the scallions.
Notes
The noodle cooking time depends on the package instructions. The recipe does not specify how long the coconut milk should simmer before the water is added.
