Mango Dragon Fruit Lemonade

Ingredients
- 1 cup Simple syrup (equal parts water and sugar)
- 1.25 cup Lemon juice (freshly squeezed, about 6-8 lemons)
- 2 cup Cold water
- 2 Mangoes (large, peeled and diced)
- 2 tbsp Sugar (for mango purée)
- 1 tbsp Water (for mango purée)
- 0.5 cup Dragon fruit (diced)
- 2 tbsp Water (for dragon fruit blend)
- Ice (for serving)

In a medium saucepan, combine sugar and water over medium heat.

Stir until well combined and the sugar dissolves. Remove from heat and set aside to cool.

In a blender, combine the diced mango, 2 tbsp sugar, and 1 tbsp water. Blend until smooth, then set aside.

In a cleaned blender, blend the dragon fruit with 2 tbsp water until smooth. You can strain it if you prefer a smoother texture.

In a large pitcher, combine the mango purée, lemon juice, 2 cups cold water, simple syrup, and ice.

Add the dragon fruit blend and mix until well combined.

Taste and adjust sweetness or tartness as needed before serving.
Notes
For a natural sweetener alternative, one commenter suggests using Manuka honey. You can strain the dragon fruit purée to remove seeds if you prefer a perfectly smooth drink.
