Ingredients

  • 1 cup Simple syrup (equal parts water and sugar)
  • 1.25 cup Lemon juice (freshly squeezed, about 6-8 lemons)
  • 2 cup Cold water
  • 2 Mangoes (large, peeled and diced)
  • 2 tbsp Sugar (for mango purée)
  • 1 tbsp Water (for mango purée)
  • 0.5 cup Dragon fruit (diced)
  • 2 tbsp Water (for dragon fruit blend)
  • Ice (for serving)

Steps

  1. 1

In a medium saucepan, combine sugar and water over medium heat.

  2. 2

Stir until well combined and the sugar dissolves. Remove from heat and set aside to cool.

  3. 3

In a blender, combine the diced mango, 2 tbsp sugar, and 1 tbsp water. Blend until smooth, then set aside.

  4. 4

In a cleaned blender, blend the dragon fruit with 2 tbsp water until smooth. You can strain it if you prefer a smoother texture.

  5. 5

In a large pitcher, combine the mango purée, lemon juice, 2 cups cold water, simple syrup, and ice.

  6. 6

Add the dragon fruit blend and mix until well combined.

  7. 7

Taste and adjust sweetness or tartness as needed before serving.

Notes

For a natural sweetener alternative, one commenter suggests using Manuka honey. You can strain the dragon fruit purée to remove seeds if you prefer a perfectly smooth drink.
