Weights are estimates. Together, the ingredients weigh about 415 g before cooking, which is about 35 g per serving.
Steps
Line a baking tray with greaseproof paper and set it aside.
Put the biscuits in a food processor or blender and process until they resemble fine crumbs. If you do not have a processor, crush them with a rolling pin.
Tip the biscuit crumbs into a large mixing bowl. Add the dairy-free cream cheese and cocoa powder, then mix until fully incorporated. Press a little of the mixture together; it should stick and form a ball.
With clean hands, roll the mixture between your palms into small truffle balls. The author rolls them into 20 g balls. Place them on the lined tray.
Pinch the top of each ball to form an oval or pine-cone shape.
Starting at the base of each truffle, press cornflakes into the mixture. Work upward toward the top, using progressively smaller flakes.
Place the tray in the freezer for about 25 minutes, until the truffles are firm enough that the cornflakes will stay in place when coated.
About 5 minutes before the truffles are ready, melt the dark chocolate in a heatproof bowl set over a saucepan of boiling water (a bain-marie). Alternatively, microwave it in 20-second intervals until fully melted.
Remove the truffles from the freezer. Place one on a fork and spoon melted chocolate over it to coat; tap the fork to let excess chocolate drip back into the bowl. Repeat with the remaining truffles.
Return the coated truffles to the lined tray and place them in the freezer for 5–10 minutes to set. Because they are very cold, the chocolate should set almost immediately.
Dust each truffle lightly with icing sugar before serving.
Serve and enjoy.
Notes
Store in a sealed container in the refrigerator and serve chilled; avoid leaving them in the sun or a warm place, as they may melt. They can also be frozen for later. The amount of cornflakes and icing sugar is not specified. The source does not state the number of servings.
