Ingredients
- 2 lb ground chicken thighs
- 0.5 red onion
- 2 tbsp fresh coriander (Chopped)
- 0.5 red bell pepper
- 0.5 green bell pepper
- 0.5 yellow bell pepper
- 4 cloves fresh garlic
- salt (To taste)
- 1 tsp ground cumin
- 1 tbsp red chili flakes (Adjust according to spice level)
- 1 tsp red chili powder
- 1 tsp olive oil
- flatbread (Bread of choice; the author used mini naan bread)
- spicy chili sauce (See recipe in previous reels)
- salad (See recipe in previous reels)
- lemon juice (For drizzling on top)
Steps
- 1
Place the red and green bell peppers, yellow bell pepper, fresh coriander, garlic, red onion, and olive oil in a mini food processor. Blitz until they form a paste.
- 2
Add the ground chicken thighs to a bowl, then add the pepper and herb mixture.
- 3
Add the salt, ground cumin, red chili flakes, and red chili powder. Mix thoroughly until the seasoning and vegetable paste are evenly distributed through the chicken.
- 4
Using wet hands, shape the chicken mixture into kebabs of the desired shape and spread each kebab to an even thickness.
- 5
Cook the kebabs on a grill, in a heavy-based skillet, or on a griddle for about 4–5 minutes on each side.
- 6
Warm the flatbread.
- 7
Add the spicy chili sauce and salad to the warmed bread.
- 8
Add the cooked koftas, drizzle lemon juice over the top, and serve.
