Ingredients

  • 1.5 lb golden baby potatoes (New potatoes or creamer potatoes; if large, cut them in half.)
  • 2 oz grated Parmesan cheese (Approximately 1 tbsp for the base of each potato.)
  • salt (To taste; used to salt the water and season the potatoes.)
  • garlic powder (To taste.)
  • onion powder (To taste.)
  • paprika (To taste.)
  • Italian herb seasoning (To taste.)
  • 8 oz shredded mozzarella cheese (For topping the potatoes.)
  • fresh chives (Optional, for garnish.)
  • chili flakes (Optional, for garnish.)
  • Lazy Tzatziki (Optional, for serving as a dip; the source does not provide quantities or a recipe for the dip.)
  • water (As needed to boil the potatoes.)

Steps

  1. 1

Preheat the oven to 425 °F (220 °C). Line a large rimmed baking sheet with parchment paper and set it aside.

  2. 2

Bring a large pot of salted water to a boil.

  3. 3

Add the potatoes to the boiling water, let the water return to a boil, and cook them for 10 to 15 minutes, or until tender when pierced with a fork. The cooking time depends on the size of the potatoes.

  4. 4

Immediately remove the potatoes from the water and transfer them to the prepared baking sheet to cool slightly.

  5. 5

If any potatoes are large, cut them in half. If they are very small, you can leave them whole.

  6. 6

For the potatoes you leave whole, score the surface in a crosshatch pattern so they are easier to smash and do not fall apart.

  7. 7

Place approximately 1 tbsp of grated Parmesan on the baking sheet for each potato, then place each potato on top of the cheese.

  8. 8

Cut a small square of wax paper or parchment paper and place it over a potato.

  9. 9

Press the potato with the bottom of a glass to flatten it as much as possible without destroying it. The paper prevents the glass from sticking and breaking the potato apart.

  10. 10

Remove the small piece of paper and repeat the process with the remaining potatoes.

  11. 11

Season each potato with salt, garlic powder, onion powder, paprika, and Italian herb seasoning, all to taste.

  12. 12

Top each potato with shredded mozzarella cheese.

  13. 13

Bake for 15 minutes, or until the surface is golden brown.

  14. 14

Serve the potatoes hot. If desired, garnish them with fresh chives or chili flakes and serve with Lazy Tzatziki.

Notes

The source also states that they can be cooked in an air fryer for 15 minutes, but does not specify the temperature. Do not overboil the potatoes: they should be tender but retain enough structure to be smashed.
