Ingredients

  • 4 Potatoes (Large, peeled, and cut into chunks; approximately 900 g total)
  • 200 g Mozzarella cheese (Grated or cut into small cubes, for the filling)
  • 3 tbsp Olive oil (For cooking the patties in the pan)
  • Salt (To taste, for seasoning the potatoes)

Steps

    Peel the potatoes, cut them into evenly sized pieces, and place them in a pot. Cover them with cold water and add salt to taste.

    Bring the water to a boil and cook the potatoes for about 15 to 20 minutes, until completely tender when pierced with a fork.

    Drain the potatoes very well and mash them while still hot until smooth. Let them cool enough to handle; the mash should be firm and not watery.

    Divide the mashed potatoes into equal portions. Take one portion, flatten it in the palm of your hand, place cheese in the center, and close the mash around the filling, sealing the edges well.

    Gently flatten each filled ball to form a patty approximately 1 to 2 cm thick. Repeat with the remaining mashed potatoes and cheese.

    Heat the olive oil in a large skillet over medium heat. Once hot, add the patties without overcrowding the pan.

    Cook the patties for approximately 3 to 5 minutes per side, turning them carefully, until golden and crispy on the outside and the cheese inside is melted.

    Transfer the patties to a plate lined with paper towels and serve hot, while the cheese is still melted.
