Ingredients
- 5 potatoes (small/medium, peeled, washed, and cut into cubes)
- 1 tbsp olive oil (for potatoes)
- salt (for potatoes)
- black pepper (for potatoes)
- garlic powder (for potatoes)
- paprika (for potatoes)
- 1 lb ground beef
- 1 onion (chopped)
- 0.5 tsp salt (for beef mixture)
- 0.5 tsp black pepper (for beef mixture)
- 1 tsp onion powder
- 1 tsp paprika (for beef mixture)
- 1 tbsp garlic (minced)
- 1.5 tbsp Worcestershire sauce (1-2 tbsp)
- 8 oz tomato sauce (can)
- 0.25 cup ketchup
- 1 tbsp mustard (yellow mustard)
- 2 tbsp bbq sauce
- 1.5 cup Colby Jack cheese (shredded)
- dried parsley (for garnish)
Steps
- 1
Peel, wash, and cut the potatoes into small cubes.
- 2
Place the potato cubes in a bowl and toss them with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- 3
Transfer the potatoes to the air fryer and cook at 400°F (200°C) for 20-25 minutes. Shake the basket at least a couple of times during cooking to ensure even crisping.
- 4
While the potatoes are air frying, place a large skillet over medium-high heat. Add the ground beef and chopped onion.
- 5
Brown the beef and onion together, breaking the meat apart with a spatula, until the beef is cooked through and the onion is softened.
- 6
Add the salt, pepper, onion powder, and paprika to the meat mixture and stir to combine.
- 7
Stir in the minced garlic, Worcestershire sauce, tomato sauce, ketchup, mustard, and BBQ sauce.
- 8
Reduce the heat to low and let the sauce simmer until the potatoes are finished cooking.
- 9
Once the potatoes are crispy, add them to the skillet with the sloppy joe mixture and give it a quick stir to combine.
- 10
Sprinkle the shredded Colby Jack cheese evenly over the top of the skillet.
- 11
Place the skillet under the oven broiler for 1-2 minutes, just until the cheese is melted and bubbly.
- 12
Garnish with dried parsley and serve immediately.
Notes
The author notes that they do not use exact measurements for the potato seasonings; adjust to your preference. For the best results, ensure the potatoes are cut into uniform cubes so they cook evenly in the air fryer.
