Ingredients

  • 1 package King’s Hawaiian Rolls (12-count, sliced in half horizontally)
  • 1 lb ground beef (browned and drained)
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 6 pieces American cheese (slices)
  • 0.33 cup Grillo’s Pickles (chopped for sauce, plus extra whole chips for assembly)
  • pickle juice (a splash)
  • 0.5 cup mayo
  • 1.5 tbsp ranch seasoning (dry mix)
  • 0.5 cup milk
  • 0.5 cup shredded colby jack cheese (estimated quantity)
  • 6 strips bacon (cooked and crumbled)
  • crispy pickle flavored fried cucumbers (found in the salad aisle, for topping)
  • 2 tbsp butter (melted)
  • sesame seeds (for topping)

Steps

    Preheat your oven to 350°F (175°C).

    Make the pickle ranch sauce by combining 1/2 cup mayo, 1 1/2 tbsp ranch seasoning, 1/2 cup milk, and 1/3 cup chopped Grillo’s pickles in a bowl. Add a splash of the pickle juice and stir until well combined. Set the mixture in the refrigerator to thicken while you prepare the rest of the ingredients.

    Place a skillet over medium-high heat. Add the 1 lb of ground beef and cook until browned, breaking it up with a spatula as it cooks.

    Season the beef with 1/2 tsp salt, 1/2 tsp pepper, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp paprika. Stir to incorporate the seasonings.

    Once the ground beef is fully browned, drain any extra grease from the skillet and set the beef aside.

    Slice the package of Hawaiian Rolls in half horizontally. Place the bottom half of the rolls in a greased baking dish or on a sheet pan.

    Lay out the 6 pieces of American cheese across the bottom layer of the rolls.

    Evenly spread the cooked ground beef on top of the American cheese.

    Drizzle some of the prepared pickle ranch over the ground beef, then sprinkle with the shredded colby jack cheese.

    Top the cheese with 6 strips of crumbled bacon, whole Grillo’s pickle chips, and the crispy pickle flavored fried cucumbers.

    Place the top half of the slider rolls onto the assembled sliders. Brush the tops of the rolls with 2 tbsp of melted butter and sprinkle with sesame seeds.

    Bake at 350°F for 10-15 minutes until the cheese is melted and the tops of the rolls are golden brown.

    Serve warm with the remaining pickle ranch sauce on the side for dipping.

Notes

For the best results, keep your knuckles on the counter when slicing the Hawaiian rolls to ensure an even cut. The crispy pickle fried cucumbers can usually be found in the salad topping aisle of the grocery store.
