Ingredients
- 2 lb Minced chicken
- 10 Mini tortillas
- Salt (To taste, for seasoning the chicken)
- Black pepper (To taste, for seasoning the chicken)
- Oil (A small amount, for cooking)
- 1 cup Mayonnaise (For the Caesar dressing)
- 2 tsp Dijon mustard (For the Caesar dressing)
- Salt (To taste, for the Caesar dressing)
- 3 tbsp Olive oil (Whisk in slowly for the Caesar dressing)
- 1 tsp Worcestershire sauce (For the Caesar dressing)
- 2 tsp Lemon juice (For the Caesar dressing)
- 2.5 cloves Garlic (Freshly minced; source specifies 2–3 cloves)
- 1 tsp Black pepper (For the Caesar dressing)
- 1 large head Romaine lettuce (Diced; for the Caesar salad topping)
- 0.333 cup Parmesan cheese (Shredded or shaved; for topping)
- 1 cup Croutons (For topping)
Steps
- 1
Divide the minced chicken into 10 equal portions.
- 2
Place 2–3 tablespoons of ground chicken in the center of each mini tortilla. Press the chicken down gently so it forms an even layer over the tortilla.
- 3
Sprinkle the chicken with salt and black pepper to taste.
- 4
Heat a skillet over high heat and add a small amount of cooking oil.
- 5
Place the tortillas in the skillet with the meat side facing down. Reduce the heat to medium-low and cook for 2–3 minutes, or until the chicken is cooked through.
- 6
Flip the tacos and cook the tortilla side until it is crispy and golden.
- 7
To make the Caesar dressing, place the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, freshly minced garlic, salt, and black pepper in a bowl.
- 8
Whisk the dressing ingredients together until combined.
- 9
Slowly pour in the olive oil while continuing to whisk until the dressing is smooth and emulsified.
- 10
Once the tacos are cooked, top each one with diced romaine lettuce, Parmesan cheese, and croutons.
- 11
Drizzle the Caesar dressing over each taco.
- 12
Serve the Chicken Caesar Smash Tacos immediately.
Notes
The source says to cook the chicken until cooked through but does not provide a target internal temperature. The amount of cooking oil is unspecified; use only a small amount as stated.
