Claypot Chicken Rice (without claypot)

Ingredients
- 475 g chicken (cut into bite-sized pieces; 450-500g)
- 1.5 tbsp soy sauce (for marinade)
- 0.75 tbsp dark soy sauce (for marinade (half the amount of soy sauce))
- 0.75 tbsp oyster sauce (for marinade (half the amount of soy sauce))
- cooking wine or rice vinegar (optional, to balance marinade)
- 2 cup rice (typically jasmine rice)
- 2 cup mushroom soaking water (1:1 ratio to rice)
- 2 lap cheong (Chinese sausage) (sliced)
- 1 knob ginger (sliced or julienned)
- 5 dried mushrooms (soaked and cubed; 4-6 pieces)
- dark soy sauce (to top off at the end)
- sesame oil (to top off at the end)

Soak the dried mushrooms in water until softened. Reserve the soaking water and cube the mushrooms.

Prepare the chicken marinade by mixing soy sauce, dark soy sauce, and oyster sauce in a 2:1:1 ratio. For this recipe, use approximately 1.5 tbsp soy sauce, 0.75 tbsp dark soy sauce, and 0.75 tbsp oyster sauce. Add optional cooking wine or rice vinegar if desired to balance the flavors.

Marinate the chicken pieces in the prepared sauce.

Wash 2 cups of rice and place them in the rice cooker.

Add 2 cups of the reserved mushroom soaking water to the rice cooker (maintaining a 1:1 ratio with the rice).

Place the marinated chicken, sliced lap cheong, ginger, and cubed mushrooms on top of the rice.

Close the rice cooker and start the cooking cycle. It should take approximately 20 minutes or less to cook through.

Once the rice cooker finishes, open it and top the dish with an extra drizzle of dark soy sauce and sesame oil. Mix well before serving, making sure to scrape up any crispy burnt parts from the bottom.
Notes
The author suggests using the mushroom soaking water for extra flavor. The ginger provides a warm, comforting profile. If you like crispy bits, look for the 'burnt parts' at the bottom of the rice cooker pot.
