Ingredients

  • 2 L-shaped organic chicken legs (L-shaped usually refers to the whole leg (thigh and drumstick))
  • 5 red dates (dried jujubes)
  • 5 slices ginger (for steaming)
  • 2 tbsp cooking oil (for making scallion oil)
  • 0.5 cup scallions (finely chopped for the sauce; also used to infuse the oil)
  • 0.5 cup ginger (finely minced for the sauce (1:1 ratio with scallions))
  • 1 tbsp soy sauce
  • 0.5 tsp sugar
  • 0.25 tsp salt
  • chicken broth (reserved from the steaming process)

Steps

  1. 1

Place the chicken legs, red dates, and ginger slices in a heatproof bowl or steaming dish.

  2. 2

Bring water to a boil in a steamer. Once boiling, place the chicken inside and steam for 16 minutes.

  3. 3

Remove the chicken from the steamer and let it cool down. Carefully pour out and reserve the chicken broth (soup) that collected in the bowl.

  4. 4

Once cooled, shred the chicken into bite-sized pieces and set aside.

  5. 5

In a small pan, heat the cooking oil with some scallion pieces until the oil is fragrant and the scallions are cooked.

  6. 6

In a heatproof bowl, combine a 1:1 ratio of finely minced ginger and chopped scallions.

  7. 7

Pour the hot scallion oil over the fresh ginger and scallion mixture to sizzle and release their flavors.

  8. 8

Add 1 tbsp soy sauce, 1/2 tsp sugar, 1/4 tsp salt, and the reserved chicken broth to the ginger-scallion mixture.

  9. 9

Mix the sauce well and pour it over the shredded chicken before serving.

Notes

The 'L-shaped' chicken refers to the whole leg (thigh and drumstick attached). The author suggests serving this with salted vegetable soup for a complete comforting meal. The broth collected during steaming is essential for the sauce's flavor.
