Ingredients
- 1 lb baby potatoes
- 2 tbsp Cajun seasoning (Additional seasoning may be sprinkled over the potatoes if desired.)
- 2 tbsp olive oil
- 0.5 clove fresh garlic (The method refers to baked garlic, but no separate garlic-baking instruction is provided.)
- parsley (Amount not specified.)
- salt (To taste; used in the boiling water and seasoning mixture.)
- 0.5 tsp black pepper
- Parmesan cheese (For garnishing; amount not specified. Use grated Parmesan.)
- 5 tbsp unsalted butter (Softened.)
- water (Enough to cover the potatoes in the pot.)
Steps
- 1
Rinse the baby potatoes and place them in a large pot. Add enough water to cover them and season the water with salt. Cover the pot.
- 2
Bring the covered pot to a boil over high heat. Boil the potatoes for 8–10 minutes, or until they pierce easily with a knife.
- 3
Drain the potatoes thoroughly and discard the cooking water.
- 4
Preheat the oven to 400°F (205°C). Line a baking sheet with parchment paper.
- 5
Transfer the boiled potatoes to the prepared baking sheet. Using a flat-bottomed glass or potato masher, gently squish each potato while keeping it in one piece.
- 6
In a bowl, combine the softened butter, garlic, olive oil, Cajun seasoning, salt, black pepper, and parsley. Mix until combined.
- 7
Brush the butter and seasoning mixture over the smashed potatoes, coating them evenly.
- 8
If desired, sprinkle a little additional Cajun seasoning over the top of each potato.
- 9
Sprinkle grated Parmesan cheese over the potatoes.
- 10
Bake at 400°F (205°C) for 30–35 minutes, or until the potatoes reach the desired crispiness.
- 11
Serve the potatoes immediately with dipping sauce.
Notes
The source lists fresh garlic but refers to it as baked garlic in the method without explaining when or how to bake it. The amount of parsley, Parmesan, boiling water, and dipping sauce is not specified.
