Jalapeño Popper Style Chicken Fritters

Ingredients
- 500 g chicken breast (finely chopped or ground)
- 1 cup cheddar cheese (shredded)
- 2 jalapeños (diced, seeded for less heat)
- 0.25 cup bacon bits (cooked and crispy)
- 0.25 cup all-purpose flour (to bind the mixture)
- 2 tbsp cream cheese (at room temperature)
- 1 egg (large)
- salt and pepper (to taste)
- 2 tbsp vegetable oil (for frying)

In a large bowl, combine the minced chicken, shredded cheddar cheese, diced jalapeños, bacon bits, flour, cream cheese, and the egg.

Season the mixture generously with salt and pepper to taste. Mix all ingredients well until fully incorporated.

Heat the vegetable oil in a skillet over medium heat.

Scoop portions of the mixture into the hot skillet, pressing down lightly to form patties or fritters.

Cook the fritters for about 3 to 4 minutes per side.

Continue cooking until the outside is golden brown and crispy, and the internal temperature of the chicken reaches 165°F (74°C).

Remove from the skillet and serve warm with your favorite dipping sauce.
Notes
They can be served with ranch dressing or sour cream to contrast the heat. If you prefer a lighter version, you can try cooking them in an air fryer.
