  • 1 packet instant ramen noodles (Use the noodles from one standard 85 g packet; reserve the seasoning packet.)
  • 1 packet instant ramen seasoning (Use the seasoning included with the ramen packet, or add it to taste.)
  • 3 eggs (Large eggs, beaten)
  • 2 scallions (Thinly sliced)
  • 1 tbsp cooking oil (For frying the omelette)
  • 1 tbsp chili sauce (Optional, for serving)

    Bring a small saucepan of water to a boil. Add the instant ramen noodles and cook for about 2–3 minutes, or until just tender. Do not overcook them, since they will cook again in the omelette.
