Ingredients

  • 1 lb ground pork
  • 0.5 cup peeled and deveined raw shrimp (chopped)
  • 0.5 cup leeks (chopped)
  • 0.5 cup scallions (chopped)
  • 2 tbsp soy sauce (plus more for serving)
  • 2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp granulated chicken bouillon
  • 2 tsp sugar
  • 1 tsp black pepper
  • 3 garlic (cloves, finely minced)
  • 30 round wonton wrappers (store-bought)
  • 1 tbsp vegetable oil (or any neutral high-smoke point oil)
  • chili oil (for serving)
  • black vinegar (for serving)

Steps

    In a large bowl, mix the ground pork, chopped shrimp, leeks, scallions, soy sauce, dark soy sauce, oyster sauce, chicken bouillon, sugar, and black pepper.

    Place 1 tablespoon of the pork filling in the center of a wonton wrapper.

    Using a spoon, spread the filling in an even layer across the entire surface of the wrapper. Repeat the process with the remaining filling and wrappers.

    Heat the oil in a large skillet over medium-high heat until the oil shimmers.

    Working in batches of 3 or 4 dumplings (about 8 to 10 batches in total), add the dumplings to the hot oil.

    Cook until the bottom is crispy and lightly toasted, about 2 minutes.

    Flip the dumplings and cook until the wrapper becomes crispy, about 1 more minute.

    Repeat the process with the remaining dumplings.

    Serve hot with chili oil, black vinegar, and more soy sauce to taste.

Notes

This 'no-fold' technique is ideal for beginners. Make sure the filling is well-spread so it cooks evenly and quickly.
