Ingredients

  • 2 fresh garlic heads (Halved)
  • 8 tbsp butter (Very softened)
  • salt (To taste; use a pinch when roasting the garlic)
  • 1 tsp black pepper
  • 1 tbsp oil (For drizzling over the garlic)
  • 1 tsp red chili flakes (For the garlic butter)
  • 2 fresh garlic cloves (Finely minced)
  • 2 tbsp fresh parsley (Chopped; for the garlic butter)
  • 1 loaf sourdough bread or Italian bread (Slice in half lengthwise)
  • 1 tbsp fresh parsley (Freshly chopped; for finishing)
  • 1 tsp red chili flakes (For finishing)
  • 1.5 cup shredded mozzarella cheese (For topping the bread)

Steps

  1. 1

Preheat the oven to 400°F (205°C). Place the halved garlic heads on foil, drizzle them with the oil, and add a pinch of salt.

  2. 2

Wrap the garlic securely in the foil and bake at 400°F for 40–50 minutes, until the cloves are soft.

  3. 3

Remove the roasted garlic from the oven, allow it to cool, and squeeze the softened cloves out of their skins.

  4. 4

Mash the roasted garlic with the very softened butter, finely minced fresh garlic, salt, black pepper, red chili flakes, and chopped parsley until the mixture is smooth.

  5. 5

Slice the loaf in half lengthwise and spread the garlic butter generously over the cut surfaces.

  6. 6

Place the buttered bread in the 400°F oven and bake for 6 minutes, until the butter is melty and golden.

  7. 7

Remove the bread from the oven and top it with the shredded mozzarella cheese.

  8. 8

Return the bread to the oven and bake for another 6 minutes, until the cheese is melted.

  9. 9

Broil the bread for 1–2 minutes, until the edges are crispy. Watch it closely while broiling.

  10. 10

Finish with the freshly chopped parsley and additional red chili flakes. Slice and serve warm.
