Ingredients

  • 4 Boneless chicken thighs (Cut into cubes)
  • 50 ml Zero-sugar barbecue sauce (Sugar-free, if possible)
  • 50 ml Soy sauce
  • 1 tbsp Cornstarch (For thickening)
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Sweetener (Use your usual sweetener; adjust according to its sweetness)
  • 1 tbsp Ground black pepper (Use some to season the chicken and the rest for the sauce)
  • 250 ml Water
  • Salt (To taste)

    Cut the boneless chicken thighs into evenly sized cubes so they cook uniformly.

    Season the chicken cubes with some of the pepper and salt to taste.

    Cook the chicken in the air fryer until browned on the outside and completely cooked through in the center, approximately at 190 °C for 12-15 minutes, stirring or shaking the basket halfway through cooking. It should reach 74 °C internally.

    While the chicken cooks, place the zero-sugar barbecue sauce, garlic powder, onion powder, remaining pepper, soy sauce, cornstarch, sweetener, and water in a blender jar.

    Blend vigorously until the cornstarch has completely dissolved and no lumps remain.

    Pour the mixture into a large skillet and heat over medium heat, stirring frequently to prevent the cornstarch from sticking to the bottom.

    Let the sauce reduce until it thickens and develops a glossy, syrupy texture, approximately 5-8 minutes. It is ready when it coats the back of a spoon.

    Add the cooked chicken to the skillet with the thickened sauce.

    Stir to fully coat the chicken with the sauce and cook for a few more minutes, until the sauce clings well to all the pieces and reduces slightly.
