Ingredients

  • 1 tbsp Light butter (For the crust)
  • 3 tbsp Oats (For the crust)
  • 1 tbsp Sweetener (For the crust; adjust to taste depending on the type of sweetener)
  • 300 g Cottage cheese
  • 200 g Light cream cheese
  • 1 tbsp Oat flour (For the cheesecake mixture)
  • 3 Eggs
  • 2 tbsp Sweetener (For the cheesecake mixture; adjust to taste depending on the type of sweetener)
  • Vanilla extract (A splash, approximately 1 tsp)
  • Blueberries (Approximate amount for topping or serving with the cheesecake; the video does not specify the quantity)
  • 1 tbsp Sweetener (For the jam; adjust to taste depending on the type of sweetener)

Steps

  1. 1

Prepare the crust by mixing the light butter, oats, and one tablespoon of sweetener in a bowl until you obtain a moist, uniform mixture.

  2. 2

Spread the oat mixture over the bottom of a small air-fryer-safe pan. Press and smooth it with your fingers to form a compact, even layer.

  3. 3

In another bowl, add the cottage cheese, light cream cheese, oat flour, the three eggs, two tablespoons of sweetener, and the vanilla extract.

  4. 4

Beat all the cheesecake mixture ingredients until smooth and lump-free.

  5. 5

Pour the cheesecake mixture over the crust and gently smooth the surface.

  6. 6

Cook the cheesecake in the air fryer at 160 °C for 25 minutes, until the center is set and the surface is lightly golden.

  7. 7

While the cheesecake is cooking, place the blueberries and one tablespoon of sweetener in a small saucepan.

  8. 8

Blend the blueberries with the sweetener until you obtain a jam-like texture.

  9. 9

Cook the blueberry mixture over low heat for about 15 minutes, stirring occasionally, until it thickens and begins to bubble gently.

  10. 10

Let the cheesecake rest for a few minutes before removing it from the pan, then serve it with the blueberry jam on top or on the side.

Notes

The video states that one quarter of the cheesecake provides approximately 273 kcal. The amount of blueberries is not specified, so an estimated amount of 150 g has been used. The cheesecake may need to cool completely to develop a firmer texture.
