Ingredients

  • 1 lb ground beef
  • 1 lb Italian sausage
  • 1 small onion (diced)
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 2 tbsp tomato paste (divided)
  • 3 cloves garlic (minced)
  • 2 tsp Worcestershire sauce (divided)
  • 1 cup chicken bone broth (the author recommends Kettle and Fire brand)
  • 1 tsp cornstarch (mixed with 2 tablespoons of water to create a slurry)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 1 large green cabbage
  • 1 tbsp fresh parsley (chopped)

Steps

    Remove the damaged outer leaves from the cabbage and cut it into 1-inch thick steaks or large wedges, keeping the core intact so they stay together.

    In a large skillet, cook the ground beef and Italian sausage until fully browned.

    Add the diced onion, green and red bell peppers, garlic powder, onion powder, smoked paprika, salt, and black pepper.

    Stir in the tomato paste and Worcestershire sauce. Sauté until all ingredients are well combined.

    Add the chicken bone broth, minced garlic, the rest of the Worcestershire sauce, and the cornstarch slurry. Mix well.

    Add the cabbage to the skillet, cover, and cook, stirring occasionally, until the cabbage has reduced and softened.

    Serve hot, optionally accompanied by cauliflower rice, and garnish with fresh chopped parsley.

Notes

The cabbage seems like a lot at first, but it reduces significantly while cooking and absorbs all the flavors from the meat and spices. The author mentions in the video that a mixture of ground beef and pork can also be used.
